Year 9 experienced fine-dining during a visit to Colchester Institute’s Centre for Hospitality and Food Studies’ (CH&FS) Balkerne Restaurant on Wednesday 9 May, sampling food freshly prepared by students on the Professional Chefs programmes and served by front of house Hospitality Management trainees. The girls chose from slow-roast belly of pork with creamed mash potato, seasonal vegetables and apple sauce, salmon and smoked haddock fishcake with triple cooked chips and a citrus and coriander mayonnaise, or cream cheese stuffed Portobello mushroom on a bed of creamy risotto. A trio of desserts of lemon tart, chocolate brownie and profiteroles followed, the number of empty plates indicated that they very much enjoyed their meals!
Following lunch, the girls went on a guided tour of the kitchens to see the Professional Chefs students in action, this was all rounded off with a talk about Hospitality Management courses and career options. A walk back to school was most welcome after such a delicious, but filling meal!
