Filleting a whole salmon, portioning a chicken and making buttercream quenelles were highlights of a cookery masterclass presented by Colchester Institute’s Head of Hospitality and Food Studies to St Mary’s Year 9 and GCSE Food and Nutrition students on Friday 19 January. Chef Martin Fordham talked to the students about careers in the hospitality and food industry along with tales from his career working in restaurants. He demonstrated various food preparation techniques and created several dishes from scratch, including chicken stir-fry and chocolate brownies – a lovely treat for the students and staff to sample at the end!
